Abstract: As a puffed food, doughnuts are generally packed in air, which can prevent doughnuts from being oxidized and crushing, and at the same time extend shelf life. Therefore, it is necessary to strengthen the monitoring of the internal gas composition of the doughnut package to prevent the quality problems caused by the change of the proportion of the gas inside the package caused by the unsound sealing of the package or the poor barrier property of the packaging material. In this paper, HGA-02 headspace gas analyzer was used to test the internal gas composition of the donut-filled nitrogen package, and the test process, test principle, and equipment parameters were described in detail, providing relevant technical users with detailed technical references.

1 , current situation

Donuts are deep-fried foods made from flour, sugar, butter, and eggs. They contain a lot of protein and fats. Therefore, in order to ensure that donuts are not easily oxidized or crushed, many donut manufacturers interior of the package and charged with nitrogen (N2), i.e. nitrogen packaging, relying on the inert gas N2 inside the package to prevent the presence of O2. If the dough used in the doughnuts has poor barrier properties to N2 and O2 , or if the donut packing is poorly sealed, the content of N2 or O2 inside the package is subject to change, so that the nitrogen-filled package cannot be sweetened. The role of donuts is that doughnuts are not crispy and flaky. Therefore, analysis of the gas composition inside the inflatable packaging is a major concern for many donut manufacturers.

2 , testing standards

At present, there is no standard method for the detection of the headspace air inside sealed packages in China. However, there are many types of detection instruments for headspace air at home and abroad, and the level and accuracy of instrument technology are also high. 4.1 Test principle

The headspace gas analysis is often based on a sensor method. The sampler is inserted inside the package to be measured, and a sufficient volume of sample gas is collected from the headspace within the package. The sample gas is injected into the gas analysis sensor, and the test data is recorded after the interval of a certain test time or gas concentration output from the gas analysis sensor is stabilized. The detection of each gas content requires the use of different gas analysis sensors. When detecting the O2 content in the sample gas, the sample gas needs to be injected into the O2 analysis sensor, and when the CO2 content in the sample gas is detected, the sample gas needs to be injected into the CO2 analysis. sensor.

4.2 Scope of application

(1) This equipment is suitable for testing the content of O2 and CO2 in sealed packaging bags, packaging containers and other packaging containers and their mixing ratio.

Sealed bags: It is suitable for testing O2 and CO2 content and mixing ratio of expanded foods, ready-to-eat foods, coffee, cheese, milk tea, milk powder, bread, bean flour, modified atmosphere packaging, and medicines . 4.3 Equipment Parameters

Test gas types: O2 , CO2 . O2 or CO2 measurement range: 0 ~ 100% . O2 measurement accuracy: 0% ~ 2% , ±0.3% (absolute value); 2% ~ 100% , ±0.5% (relative value). 5 , the test process

(1) Take 5 specimens without obvious defects, leaks, and seals , and apply the seal to the test specimen. Be careful to stick tightly to prevent air leakage.

(2) Turn on the instrument and warm up the instrument.

(3) Insert the sampling needle into the sample. After the sample is stable, the sampling needle is pierced through the middle of the sealing pad to enter the inside of the sample, but the sample pin is prevented from being clogged or broken due to the article being pinned into the package.

(4) Set test parameters such as test time, gas collection volume, etc.

(5) Click to start the test, the sampler automatically collects enough sample gas from the inside of the sample.

(6) The sample gas will automatically enter the gas analysis sensor via injection port and pipeline.

(7) Record the test data after a certain test interval or when the gas concentration output from the gas analysis sensor is stable.

6 , test results
